There is nothing that beats the rich and thick flavor of a good peanut sauce. It’s one of the most quintessential elements in traditional Thai cuisine and I will take just about any reason to drizzle, dip, or marinate with it! This Thai Peanut Chicken recipe is simple to make and requires nothing more than whisking a few ingredients together! We love to let it marinade throughout the day to really bring out the sweet nuttiness! But it’s nice that it really only requires one hour to marinade. Give it a try the next time you’re itching for an easy asian delight!
Thai Peanut Chicken:
- 2 lbs boneless chicken thighs, cubed
- 1/2 cup creamy peanut butter
- 1 cup full-fat coconut milk, canned
- 2 TBSP fresh lime juice
- 2 TBSP soy sauce or fish sauce
- 1 TBSP brown sugar, packed
- 1/2 tsp ground ginger
- 3 cloves garlic, minced
- 1/2 tsp crushed red pepper
For Serving:
- Rice
- Cilantro
- Chopped peanuts
- Lime wedges
Add peanut butter, coconut milk, lime juice, soy sauce, brown sugar, ginger, garlic, and red pepper flakes into a medium bowl and whisk until ingredients are well combined.
Transfer 1 cup of prepared sauce into a small bowl and cover. Chill in the fridge until you are ready to serve.Place the chicken pieces in a baking dish and cover with the remaining peanut sauce. Toss to coat well. Cover and refrigerate for 1-8 hours. Toss the chicken again halfway through marinating process.
Thread the marinated chicken pieces onto skewers and place on a lightly greased baking sheet. Slide onto the top rack of the oven and broil on high for 6 minutes or until cooked through.While chicken cooks, remove the sauce from the fridge and bring to room temperature. Remove the cooked chicken from the oven and place the chicken over a bed of rice, Add peanut sauce and desired garnish. Enjoy!
