Description

This Thai Peanut Chicken is a simple yet delicious asian meal the whole family will love! 


Ingredients

Scale
  • 2 lbs boneless chicken thighs, cubed
  • 1/2 cup creamy peanut butter
  • 1 cup full-fat coconut milk, canned
  • 2 TBSP fresh lime juice
  • 2 TBSP soy sauce or fish sauce
  • 1 TBSP brown sugar, packed
  • 1/2 tsp ground ginger
  • 3 cloves garlic, minced
  • 1/2 tsp crushed red pepper

For Serving:

  • Rice
  • Cilantro
  • Chopped peanuts
  • Lime wedges


Instructions

  1. Add peanut butter, coconut milk, lime juice, soy sauce, brown sugar, ginger, garlic, and red pepper flakes into a medium bowl and whisk until ingredients are well combined
  2. Transfer 1 cup of prepared sauce into a small bowl and cover
  3. Chill in the fridge until you are ready to serve
  4. Place the chicken pieces in a baking dish and cover with the remaining peanut sauce
  5. Toss to coat well, cover and refrigerate for 1-8 hours
  6. Toss the chicken again halfway through marinating process
  7. Thread the marinated chicken pieces onto skewers and place on a lightly greased baking sheet
  8. Slide onto the top rack of the oven and broil on high for 6 minutes or until cooked through
  9. While chicken cooks, remove the sauce from the fridge and bring to room temperature
  10. Remove the cooked chicken from the oven and place the chicken over a bed of rice
  11. Add peanut sauce and desired garnish
