This Thai Peanut Chicken is a simple yet delicious asian meal the whole family will love!
Ingredients

- 2 lbs boneless chicken thighs, cubed
- 1/2 cup creamy peanut butter
- 1 cup full-fat coconut milk, canned
- 2 TBSP fresh lime juice
- 2 TBSP soy sauce or fish sauce
- 1 TBSP brown sugar, packed
- 1/2 tsp ground ginger
- 3 cloves garlic, minced
- 1/2 tsp crushed red pepper
For Serving:
- Rice
- Cilantro
- Chopped peanuts
- Lime wedges
Instructions
- Add peanut butter, coconut milk, lime juice, soy sauce, brown sugar, ginger, garlic, and red pepper flakes into a medium bowl and whisk until ingredients are well combined
- Transfer 1 cup of prepared sauce into a small bowl and cover
- Chill in the fridge until you are ready to serve
- Place the chicken pieces in a baking dish and cover with the remaining peanut sauce
- Toss to coat well, cover and refrigerate for 1-8 hours
- Toss the chicken again halfway through marinating process
- Thread the marinated chicken pieces onto skewers and place on a lightly greased baking sheet
- Slide onto the top rack of the oven and broil on high for 6 minutes or until cooked through
- While chicken cooks, remove the sauce from the fridge and bring to room temperature
- Remove the cooked chicken from the oven and place the chicken over a bed of rice
- Add peanut sauce and desired garnish
