Just writing out this blog post had me inching towards the kitchen…ready to make them again. If you’re looking for a low-effort, yet totally delicious dessert option, this is it! Like seriously, we’re talking a 3-ingredients glaze! I’m excited to play around with this recipe a little bit and try out a few different fruits. I’m thinking that raspberries would make a great substitute for the cherries. Please excuse me while I get baking…
Tart Cherry Scones with Vanilla Glaze:
- 1 1/2 cup flour
- 1/2 TBSP baking powder
- 1/2 cup sugar
- 3/4 tsp salt
- 1/2 cup butter frozen
- 1 egg
- 1/4 cup half and half
- 1 cup fresh or frozen pitted tart cherries
Glaze
- 1 tsp vanilla
- 2 cups powder sugar
- 1-2 TBSP water
In a large mixing bowl, combine the dry ingredients. Grate the chilled butter into the bowl of dry ingredients and work in with a pastry cutter. The mixture should be crumbly. Add egg and half and half in small bowl and whisk, gradually adding to the dry ingredients.
Chop the cherries and remove excess moisture with a paper towel. Sprinkle them with a bit of sugar and flour. Then, gently fold into dough mixture.
One of my favorite kitchen items is my scone pan. You can just spray the pan with cooking spray and pat the dough into the scone pan, filling it about 1/2 full. (This recipe will make 8 scones with my pan). Bake at 375 for 15 minutes. If you do not have a scone baking pan, simply shape the dough into 3 large circles and cut each circle into four pieces, forming 12 small scones.
While your scones bake, prepare the glaze in a small bowl. Add powdered sugar, 1 TBSP of water, and 1 tsp of vanilla. Stir together and continue to slowly add water until you get the desired consistency. After removing your scones from oven, top with vanilla glaze. Best enjoyed warm!
