Plus, I love that it’s a unique take on a classic crowd pleaser. You could form an army with the amount of chocolate chip cookie recipes on the internet today. (Now, that would be an unstoppable force.) And while I love the classics, sometimes you’re itching for something new…or perhaps just chocolatier. (Because when has anyone of a sound mind ever turned down more chocolate?) Whether it’s a neighborhood soiree or a cozy night in, these delicious cookies are sure to please!

Salted Brownie Crinkle Cookies:
- 1 cup flour
- 1 tsp baking powder
- 1/8 tsp salt
- 2 large eggs
- 1 yolk
- 1 cup sugar
- 1 TBSP vegetable oil
- 1 tsp vanilla extract
- 6 TBSP unsalted butter
- 1 cup semi-sweet chocolate chips
- 1/4 cup unsweetened cocoa powder
- 1 tsp instant coffee
- Sea salt flakes or Kosher salt
Preheat oven to 350. Line two baking sheets with parchment paper or silicone mats. In a small bowl, add flour, baking powder, and salt. Set aside.
Using a mixer, beat the eggs, egg yolk, sugar, oil, and vanilla. Mix on medium-high until fully combined and frothy. Meanwhile, in sauce pan, heat the chocolate chips, and butter. Melt over medium-low heat, stirring until fully melted and smooth. Remove from heat and whisk in cocoa and coffee.
Pour the melted chocolate mixture into your wet ingredients and mix until combined. Add the dry ingredients and mix on low speed until combined. (Your batter will be on the thinner side.)
Move to the refrigerator and let sit for 30 minutes. Scoop dough using 1 1/2 TBSP cookie scoops and place each dough ball 1 1/2 inches apart. Sprinkle sea salt flakes over the top of each cookie and bake for 9-11 minutes at 350.
Remove from oven and top with a few chocolate chips. Allow the cookies to cool on a baking sheet for 5 minutes before transferring them to a cooling rack. Enjoy!
