Description
These Salted Brownie Crinkle Cookies are simple and delicious!
Ingredients
- 1 cup flour
- 1 tsp baking powder
- 1/8 tsp salt
- 2 large eggs
- 1 yolk
- 1 cup sugar
- 1 TBSP vegetable oil
- 1 tsp vanilla extract
- 6 TBSP unsalted butter
- 1 cup semi-sweet chocolate chips
- 1/4 cup unsweetened cocoa powder
- 1 tsp instant coffee
- Sea salt flakes or Kosher salt
Instructions
- Preheat oven to 350
- Line two baking sheets with parchment paper or silicone mats
- In a small bowl, add flour, baking powder, and salt (Set aside)
- Using a mixer, beat the eggs, egg yolk, sugar, oil, and vanilla
- Mix on medium-high until fully combined and frothy
- Meanwhile, in sauce pan, heat the chocolate chips, and butter
- Melt over medium-low heat, stirring until fully melted and smooth
- Remove from heat and whisk in cocoa and coffee
- Pour the melted chocolate mixture into your wet ingredients and mix until combined
- Add the dry ingredients and mix on low speed until combined (Your batter will be on the thinner side)
- Move to the refrigerator and let sit for 30 minutes
- Scoop dough using 1 1/2 TBSP cookie scoops and place each dough ball 1 1/2 inches apart
- Sprinkle sea salt flakes over the top of each cookie and bake for 9-11 minutes at 350
- Remove from oven and top with a few chocolate chips
- Allow the cookies to cool on a baking sheet for 5 minutes before transferring them to a cooling rack
