Salted Brownie Crinkle Cookies

These Salted Brownie Crinkle Cookies are simple and delicious!


Ingredients

Scale
  • 1 cup flour
  • 1 tsp baking powder
  • 1/8 tsp salt
  • 2 large eggs
  • 1 yolk
  • 1 cup sugar
  • 1 TBSP vegetable oil
  • 1 tsp vanilla extract
  • 6 TBSP unsalted butter
  • 1 cup semi-sweet chocolate chips
  • 1/4 cup unsweetened cocoa powder
  • 1 tsp instant coffee
  • Sea salt flakes or Kosher salt

Instructions

  1. Preheat oven to 350
  2. Line two baking sheets with parchment paper or silicone mats
  3. In a small bowl, add flour, baking powder, and salt (Set aside)
  4. Using a mixer, beat the eggs, egg yolk, sugar, oil, and vanilla
  5. Mix on medium-high until fully combined and frothy
  6. Meanwhile, in sauce pan, heat the chocolate chips, and butter
  7. Melt over medium-low heat, stirring until fully melted and smooth
  8. Remove from heat and whisk in cocoa and coffee
  9. Pour the melted chocolate mixture into your wet ingredients and mix until combined
  10. Add the dry ingredients and mix on low speed until combined (Your batter will be on the thinner side)
  11. Move to the refrigerator and let sit for 30 minutes
  12. Scoop dough using 1 1/2 TBSP cookie scoops and place each dough ball 1 1/2 inches apart
  13. Sprinkle sea salt flakes over the top of each cookie and bake for 9-11 minutes at 350
  14. Remove from oven and top with a few chocolate chips
  15. Allow the cookies to cool on a baking sheet for 5 minutes before transferring them to a cooling rack
