Nothing is more suited to a cozy winter afternoon that a hearty bowl of soup. And this Rotisserie Chicken Mushroom Soup has all the umami you need for that perfect, “soul-warming” meal. I’ve always loved making soup. It’s not very labor intensive, yet highly satisfying. Just chopping and stirring, while your house fills with that delicious smell. Gather round the table with a crisp loaf of bread and there’s nothing better.

Rotisserie Chicken Mushroom Soup:
- 1 onion, diced
- 2 celery sticks, finely chopped
- 4 garlic cloves, crushed
- 1 lb mushrooms, thinly sliced
- 2 tsp fresh thyme
- 1 rotisserie chicken, shredded
- 6 cups chicken stock
- 1 cup cream
- 3 cups spinach, chopped
- pinch of chili flakes
- 1 lemon
- Salt and pepper, to taste
Heat up a splash of olive oil in a large saucepan. Cook the onions and celery until soft and translucent. Add mushrooms and cook until golden brown.
Add the thyme and garlic and cook until fragrant, about 1 minute. Add the shredded rotisserie chicken and pour in stock and cream and bring to simmer.
Cook for 5 minutes, add spinach and simmer for another 5 minutes.
Season with salt and pepper, add lemon juice to taste, and serve with bread of your choice. Enjoy!
