Description
This Quick Rotisserie Chicken Mushroom Soup makes a hearty meal for lunch or dinner!
Ingredients

- 1 onion, diced
- 2 celery sticks, finely chopped
- 4 garlic cloves, crushed
- 1 lb mushrooms, thinly sliced
- 2 tsp fresh thyme
- 1 rotisserie chicken, shredded
- 6 cups chicken stock
- 1 cup cream
- 3 cups spinach, chopped
- pinch of chili flakes
- 1 lemon
- Salt and pepper, to taste
Instructions
- Heat up a splash of olive oil in a large saucepan
- Cook the onions and celery until soft and translucent
- Add mushrooms and cook until golden brown
- Add the thyme and garlic and cook until fragrant, about 1 minute
- Add the shredded rotisserie chicken and pour in stock and cream and bring to simmer
- Cook for 5 minutes, add spinach and simmer for another 5 minutes
- Season with salt and pepper, add lemon juice to taste, and serve with bread of your choice
