Description

This Quick Rotisserie Chicken Mushroom Soup makes a hearty meal for lunch or dinner!


Ingredients

Scale
  • 1 onion, diced
  • 2 celery sticks, finely chopped
  • 4 garlic cloves, crushed
  • 1 lb mushrooms, thinly sliced
  • 2 tsp fresh thyme
  • 1 rotisserie chicken, shredded
  • 6 cups chicken stock
  • 1 cup cream
  • 3 cups spinach, chopped
  • pinch of chili flakes
  • 1 lemon
  • Salt and pepper, to taste


Instructions

  1. Heat up a splash of olive oil in a large saucepan
  2. Cook the onions and celery until soft and translucent
  3. Add mushrooms and cook until golden brown
  4. Add the thyme and garlic and cook until fragrant, about 1 minute
  5. Add the shredded rotisserie chicken and pour in stock and cream and bring to simmer
  6. Cook for 5 minutes, add spinach and simmer for another 5 minutes
  7. Season with salt and pepper, add lemon juice to taste, and serve with bread of your choice
