Ingredients: (makes approximately 30)
- 15-20 mini sweet peppers
- 8 oz goat cheese
- 1/2 cup parmesan cheese
- 1 diced jalapeño
- 2 TBSP chopped cilantro
- Salt and pepper to taste.
Cut peppers in half and remove stems and seeds. Set aside.
In bowl, add goat cheese, parmesan, diced jalapeños, and salt and pepper. Mix together until incorporated. Add cilantro and fold into cheese mixture.
Spoon cheese mixture into peppers, arrange on baking sheet lined with foil and bake at 425 for 15-18 minutes. Serve immediately and enjoy!
