These Goat Cheese Stuffed Mini Sweet Peppers are sure to be a crowd pleaser!
Ingredients

- 15-20 mini sweet peppers
- 8 oz goat cheese
- 1/2 cup parmesan cheese
- 1 diced jalapeño
- 2 TBSP chopped cilantro
- Salt and pepper to taste
Instructions
- Cut peppers in half and remove stems and seeds. Set aside
- In bowl, add goat cheese, parmesan, diced jalapeños, and salt and pepper
- Mix together until incorporated, add cilantro and fold into cheese mixture
- Spoon cheese mixture into peppers, arrange on baking sheet lined with foil
- Bake at 425 for 15-18 minutes
- Serve immediately
