These embossed shortbread cookies look classy and delicious, but are simple to make! Plus, it’s a perfect holiday activity to get the kids involved in as well! Embossed Holiday Shortbread Cookies:
- 1 cup unsalted butter, chilled & diced into cubes
- 1/2 cup sugar
- 1/4 tsp salt
- 1 tsp vanilla
- 1 3/4 cup flour
- 1/4 cup powdered sugar (for dusting)
- Embossed rolling pin
In an electric blender, add butter and sugar and mix on a low to medium speed. Add salt and blend until combined.
Add vanilla, scraping bowl as needed. Gradually add flour and mix until combined.
On a floured surface, roll out shortbread dough until it is about 1/2 inch thick, then firmly roll with embossed rolling pin. You’ll want to start with 1/2 inch thick dough, so that it is roughly 1/4 inch thick after you emboss.
Transfer on to baking sheet and cook at 350 for 22 minutes. After letting them cool, lightly dust with powdered sugar to help enhance the embossed print. Enjoy!
