Description
These Embossed Holiday Shortbread Cookies are delicious and make a fun activity for you and your kids!
Ingredients
- 1 cup unsalted butter, chilled & diced into cubes
- 1/2 cup sugar
- 1/4 tsp salt
- 1 tsp vanilla
- 1 3/4 cup flour
- 1/4 cup powdered sugar (for dusting)
- Embossed rolling pin
Instructions
- In an electric blender, add butter and sugar and mix on a low to medium speed
- Add salt and blend until combined
- Add vanilla, scraping bowl as needed
- Gradually add flour and mix until combined
- On a floured surface, roll out shortbread dough until it is about 1/2 inch thick
- Then firmly roll with embossed rolling pin
- You’ll want to start with 1/2 inch thick dough, so that it is roughly 1/4 inch thick after you emboss
- Transfer on to baking sheet and cook at 350 for 22 minutes
- After letting them cool, lightly dust with powdered sugar to help enhance the embossed print
