There’s nothing like sitting down with a crispy baguette and a bowl of something fancy to dip it in. I’ve subbed in my simple plate of olive oil and pepper for this delicious bowl of whipped ricotta! This simple recipe is perfect for charcuterie boards, upscale movie nights, or as a beautiful side dish. Recipe from Coco and Dash.
Whipped Ricotta with Honey & Lemon:
- 16 oz whole milk ricotta
- 1/2 tsp lemon zest
- 2 TBSP fresh cilantro
- 4 TBSP honey
- 1 tsp lemon juice
- pepper, to taste
- 1/2 tsp salt
- 3 TBSP olive oil
- baguette or crackers
In a mixing bowl, add ricotta and beat with an electric beater using the whisk attachment for 2 minutes, or until smooth and creamy. Transfer to a serving bowl and set aside.
In separate small mixing bowl, stir together the herbs, lemon zest, olive oil, honey, and sea salt. Pour the herb and honey mixture on top of the whipped ricotta. Top with fresh ground pepper to taste. Serve with toasted baguette slices or crackers and enjoy!
