Recently, I have been swapping salmon into popular meat dishes, and there isn’t a single one I’ve been disappointed by. It brings a lightness to the meal that is just so good! My most recent obsession is teriyaki salmon! This dish is beyond easy! The salmon cooks so fast and the sauce only requires mixing. This has been my go-to quick and delicious lunch for weeks now and I highly recommend you give it a try!

Teriyaki Salmon:
- 1lb salmon fillet, cubed
- 1 TBSP vegetable oil
- 1/2 cup low-sodium soy sauce
- 1 TBSP light brown sugar
- 1 TBSP honey
- 2 TBSP Rice vinegar
- 1/2 tsp sesame oil
- 1 tsp fresh grated ginger
- 1 tsp fresh grated garlic
- 1 tsp sriracha
- 2 green onions, sliced
- 2 tsp sesame seeds
Heat oil in a large frying pan on medium-high heat. Add cubed Salmon and brown until just cooked through.
While salmon is cooking, prepare your teriyaki sauce. In a medium bowl, whisk together soy sauce, honey, brown sugar, rice vinegar, sesame oil, ginger, garlic and Sriracha. Set aside.
Once salmon is browned, add your teriyaki sauce to the skillet and continue to cook until the sauce begins to thicken. Add in sliced green onion.
Serve teriyaki salmon over rice and top with sesame seeds. Enjoy!
