If there’s anything I’m *always* in the mood for, it’s fruit-infused baked goods. And this recipe makes it so easy to enjoy that very thing! This dessert always comes out warm, tart, and delicious! Every time I take a bite, I’m transported to a cozy, summer picnic. Give it a try the next time you’re craving a simple, yet delicious fruity dessert!
Strawberry Oat Crumble Bars:
- 1/2 cup unsalted butter, melted
- 1 cup flour
- 3/4 old fashioned whole rolled oats
- 1/2 cup sugar
- 1/4 cup brown sugar
- 1/2 tsp salt
- 2 cup fresh strawberries, chopped
- 1/3 cup sugar
- 2 TBSP lemon juice
- 2 tsp cornstarch
Preheat the oven to 350 degrees. Line an 8×8 pan with foil, and spray with a cooking spray. In a large microwave safe bowl, melt the butter for 1 minute, or until melted. Add the flour, oats, sugar, and salt and stir until combined.
Set one cup of the mixture aside for topping. Add the remaining crumble to the bottom of the pan and press down until smooth.
In a large bowl, add the strawberries, sugar, cornstarch, and lemon juice. Combine and mix until the strawberries are coated entiely.
Add the strawberries evenly over the crust and top with the remaining crumble mixture. Bake for 50-55 minutes, or until golden brown. Let them cool for at least 1 hour before cutting into squares. Enjoy!
