These Strawberry Oat Crumble Bars are a simple, yet delicious fruity dessert!
Ingredients

- 1/2 cup unsalted butter, melted
- 1 cup flour
- 3/4 old fashioned whole rolled oats
- 1/2 cup sugar
- 1/4 cup brown sugar
- 1/2 tsp salt
- 2 cup fresh strawberries, chopped
- 1/3 cup sugar
- 2 TBSP lemon juice
- 2 tsp cornstarch
Instructions
- Preheat the oven to 350 degrees
- Line an 8×8 pan with foil, and spray with a cooking spray
- In a large microwave safe bowl, melt the butter for 1 minute, or until melted
- Add the flour, oats, sugar, and salt and stir until combined
- Set one cup of the mixture aside for topping
- Add the remaining crumble to the bottom of the pan and press down until smooth
- In a large bowl, add the strawberries, sugar, cornstarch, and lemon juice
- Combine and mix until the strawberries are coated entiely
- Add the strawberries evenly over the crust and top with the remaining crumble mixture
- Bake for 50-55 minutes, or until golden brown
- Let them cool for at least 1 hour before cutting into squares
