Where are my Red Velvet fans? These Red Velvet Whoopie Pies would be a fun treat to make for your family for Valentine’s Day, or anytime of the year really. You can dress them up for any holiday by adding different sprinkles.
Red Velvet Whoopie Pies
- 2 cups flour
- 3 TBSP Unsweetened cocoa powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup butter (room temperature)
- 3/4 cup sugar
- 1/4 cup brown sugar (packed)
- 1 egg
- 1 tsp vanilla
- 1/2 cup buttermilk
- 1 oz red food coloring (liquid)
Filling/frosting:
- 1/2 cup butter
- 1/4 cup cream cheese
- 4 cups powder sugar
- 1/2 TBSP milk
- decorator bag
- Sprinkles (optional, but adorable)
Preheat oven to 375. Line two baking sheets with parchment paper or silicone baking mats. In medium bowl combine flour, cocoa powder, baking soda and salt and set aside. Using a mixer whip butter, and add sugars. Beat until well combined. Beat in egg and vanilla.
Gradually add in flour mixture and buttermilk. Add in food coloring make sure to use a spatula to scrape sides of bowl to evenly incorporate the food coloring. Scoop 1 1/2 TBSP of batter onto baking sheet spaced about 2 inches apart. Bake for 6-7 minutes. Allow cookies to cool completely.
Tip: If you don’t have buttermilk you can substitute by using 1/2 TBSP on lemon juice and filling it up the rest of the 1/2 cup with regular milk.
Meanwhile make frosting, whip butter and cream cheese. Add powdered sugar and milk. Add frosting to cooled cookies. Add frosting to bag and snip off tip with scissors. Add frosting to bottom of cookie then add another cookie on top. Add sprinkles if you wish. Enjoy!
