Who doesn’t love a good Cannoli? However, they can be a bit time consuming.This is a recipe that is delicious and very quick and easy to make. I used the Pizzelle maker by Dash and it makes the cannoli shell is a breeze!
Quick & Easy Cannoli
Shell:
- 1 cup flour
- 1/2 cup sugar
- 6 TBSP melted butter
- 1 tsp baking powder
- 1/3 cup milk
- 1 tsp vanilla
- 2 eggs
- 1/4 tsp salt
Filling:
- 2 cups ricotta cheese
- 1 cup powdered sugar
- 1/3 heavy whipping cream
- 1 tsp vanilla
- 1/2 cup mini chocolate chips
- pastry bag
Start by making batter for shells, whisk flour, sugar, salt, and baking powder together. Add melted butter, eggs, milk, and vanilla Scoop a heaping tablespoon of batter into Pizzelle Maker and cook until golden brown. When each pizzelle is done. Gently curl up to make a shape of a cannoli and hold into place for 30 seconds or until set and is will hold it’s shape on it’s own.
With mixer, blend ricotta cheese, powder sugar, and vanilla. Set aside. With another mixing bowl beat whipping cream until stiff peaks form, Fold into batter. Add to pastry bag and chill for 1 hour.
Pipe chilled filling into cannoli shells and sprinkle with mini chocolate chips at the end of cannoli. Enjoy!
