We’ve all heard it before and I’m a big proponent of this truth: breakfast is the most important meal of the day! It sound like a cliche at this point, but that doesn’t erase the value in it. For me personally, a good breakfast is one of the easiest ways to draw me out of bed in the morning. And telling me that I can have cookies for breakfast? Sure to do the trick! These protein-packed baked goods are filled with fruit, oats, trail mix, and more healthy and fibrous foods that are a great way to kickstart your day! Give this recipe a try and you’ve got breakfast for a week. (Or even just a delicious protein snack!)
Protein-Packed Breakfast Cookie:
- 1/2 cup butter or almond butter
- 1 ripe banana
- 1/2 cup apple sauce
- 1 TBSP honey
- 1 cup whole grain oats
- 2 TBSP flax seed
- 2/3 cup wild roots trail mix
- 1 tsp vanilla
- 1 1/2 tsp baking soda
- 1/2 tsp cinnamon
- 1 cup almond flour
In mixing bowl, add butter and whip. Mix in honey, banana, and apple sauce. Add vanilla, flax seed, oats, baking soda, almond flour, and cinnamon. Continue to mix until combined. Stir in Trail Mix
Roll into 1/4 cup balls and place in freezer for at least 1 hour.
Bake at 375 for 7 minutes. Remove from the oven using a spatula and press down on baked cookie to flatten. Continue to bake for 5-7 more minutes or until gold brown.
Allow to completely cool before removing from baking sheet. Enjoy!

- 1 1/2 tsp baking soda

- 1 cup almond flour
Instructions
- In mixing bowl, add butter and whip

- Add vanilla, flax seed, oats, baking soda, almond flour, and cinnamon
- Continue to mix until combined
- Stir in Trail Mix
