This Christmas Pinwheel Cookie recipe is fun and makes a great addition your holiday baking gifts. They are so festive! I love to dress them up by adding cello around the cookies and tying ribbons on both ends, it looks super cute!
Pinwheel Christmas Cookies

- 3 cups flour
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1 cup unsalted butter
- 1 1/3 cup sugar
- 2 eggs
- 1 tsp vanilla
- red food coloring
- sprinkles
Beat butter until smooth, add sugar and continue to beat until light and fluffy. Add eggs one at a time, then add vanilla. In a separate bowl add dry ingredients: flour, baking powder and salt. Gradually add to batter and mix until well combined.
Divide dough into two equal balls, place one ball of dough back into mixer, add some red food coloring and mix. Shape dough into 8″ squares, wrap in plastic wrap and put in fridge for 30 minutes.
Remove dough from fridge and cut the 8″ squares in half to form two rectangles from each color. Roll out white dough on wax paper into a rectangle that is 1/8″ thick. Now do the same with the red. Place the white dough on top of the red dough and trim edges so you have a nice straight line on all sides.
Lightly roll the two layers together. Starting at the shorter end of the rectangle, roll the dough as tightly as possible into a log. Place dough wrapped in wax paper back in fridge for 1 hour. Complete the same process with the other rectangle pieces of dough.
Remove logs form fridge and roll in sprinkles and place back in fridge for 4 more hours more. I know this is a lot of refrigerator time, but they are worth it! Think of all the things you can get done around the house while you are waiting for your cookie dough to chill.
When your cookies are ready to bake, preheat oven to 350. Slice each log into 1/4 inch rounds, Bake for 9-11 minutes until they are lightly browned. Enjoy!
