Description
These Pinwheel Christmas Cookies are fun and festive and would make a great gift to give to your neighbors for the holidays!
Ingredients
- 3 cups flour
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1 cup unsalted butter
- 1 1/3 cup sugar
- 2 eggs
- 1 tsp vanilla
- red food coloring
- sprinkles
Instructions
- Beat butter until smooth, add sugar and continue to beat until light and fluffy.
- Add eggs one at a time, then add vanilla.
- In a separate bowl add dry ingredients: flour, baking powder and salt.
- Gradually add to batter and mix until well combined.
- Divide dough into two equal balls, place one ball of dough back into mixer, add some red food coloring and mix.
- Shape dough into 8″ squares, wrap in plastic wrap and put in fridge for 30 minutes.
- Remove dough from fridge and cut the 8″ squares in half to form two rectangles from each color.
- Roll out white dough on wax paper into a rectangle that is 1/8″ thick. Now do the same with the red.
- Place the white dough on top of the red dough and trim edges so you have a nice straight line on all sides.
- Lightly roll the two layers together. Starting at the shorter end of the rectangle, roll the dough as tightly as possible into a log.
- Place dough wrapped in wax paper back in fridge for 1 hour. Complete the same process with the other rectangle pieces of dough.
- Remove logs form fridge and roll in sprinkles and place back in fridge for 4 more hours more.
- When your cookies are ready to bake, preheat oven to 350.
- Slice each log into 1/4 inch rounds, Bake for 9-11 minutes until they are lightly browned.
