One of my favorite flavor combinations is chocolate and peppermint. I love when the holidays roll around because I can finally get my fill of chocolate and peppermint everything. It means I can stop by Chik-Fil-A and pick up a Peppermint Chocolate Chip Milkshake. YUM! My fave! I can feed my chocolate and peppermint addiction at home with these delicious Chocolate Peppermint Cookies.
Chocolate Peppermint Cookies:
- 1 cup butter
- 1/2 cup sugar
- 1 cup light brown sugar
- 2 cups flour
- 1/2 cup cocoa
- 1 tsp baking soda
- 1/2 tsp salt
- 2 eggs
- 1 bag peppermint candy melts
- crushed candy canes or peppermint candies
In bowl, add dry ingredients, flour, cocoa powder, baking soda, salt and set aside. In mixing bowl beat butter and sugars until light and fluffy. Add eggs and beat until combined. Add flour mixture and mix just until they are combined. Chill dough for at least one hour or overnight.
Preheat oven to 350 and line baking sheets with parchment paper or use a baking mat. With a cookie scoop, drop dough on baking sheet. Bake for 10 minutes.
Let cool and dip each cookie in melted candy melts, place on parchment paper and sprinkle with peppermint candies. Let them set and then they are ready to eat. These make great cookies to give to your neighbors or take to a Christmas party. They are so festive and perfect for the season. Enjoy!
