I’m always looking for new ways to serve salad and this one is a great option! I pretty much love anything that requires the addition of avocados and you also can’t go wrong with Mexican food. Give this one a try soon, you will love it.
Mexican Street Corn Kale Salad:

- 4 cups chopped kale
- 1 avocado chopped into chunks
- 2 TBSP fresh lime juice
- 1/8 tsp sea salt
- 1 1/2 cups cooked chicken diced
- 1 1/2 cup Mexican street corn salsa (found in produce)
- Cotija cheese for topping
- Sriracha (optional)
It’s great served with tortilla chips!
In large bowl, add kale,1/2 of avocado, lime juice and salt. Massage with hands and mix together so kale is nicely coated.
Add diced chicken, remaining avocado, corn salsa, and gently toss. Top with Cotija cheese, cilantro, and Sriracha if desired. Serve with side of tortilla chips. Enjoy!
