Description
This Mexican Street Corn Kale Salad is a great alternative to a traditional salad!
Ingredients
- 4 cups chopped kale
- 1 avocado chopped into chunks
- 2 TBSP fresh lime juice
- 1/8 tsp sea salt
- 1 1/2 cups cooked chicken diced
- 1 1/2 cup Mexican street corn salsa (found in produce)
- Cotija cheese for topping
- Sriracha (optional)
Instructions
- In large bowl, add kale,1/2 of avocado, lime juice and salt
- Massage with hands and mix together so kale is nicely coated
- Add diced chicken, remaining avocado, corn salsa, and gently toss
- Top with Cotija cheese, cilantro, and Sriracha if desired
- Serve with side of tortilla chips
