Mexican Street Corn Kale Salad

Description

This Mexican Street Corn Kale Salad is a great alternative to a traditional salad! 


Ingredients

Scale
  • 4 cups chopped kale
  • 1 avocado chopped into chunks
  • 2 TBSP fresh lime juice
  • 1/8 tsp sea salt
  • 1 1/2 cups cooked chicken diced
  • 1 1/2 cup Mexican street corn salsa (found in produce)
  • Cotija cheese for topping
  • Sriracha (optional)

Instructions

  1. In large bowl, add kale,1/2 of avocado, lime juice and salt
  2. Massage with hands and mix together so kale is nicely coated
  3. Add diced chicken, remaining avocado, corn salsa, and gently toss
  4. Top with Cotija cheese, cilantro, and Sriracha if desired
  5. Serve with side of tortilla chips
