I love finding new ways to make salads. Give this Italian Spinach Couscous Salad a try. It works will with some grilled chicken on the side.
Italian Spinach Couscous Salad:

- 1 cup couscous pearls
- 2 cups baby spinach
- 1 cup cherry tomatoes (cut in half)
- 1/4 cup fresh basil
- lemon juice from 1/2 lemon
- 2 TBSP Olive oil
- 1 garlic minced
- 1/2 tsp garlic powder
- 1/3 cup grated Parmesan cheese
- Salt
- Pepper
In medium saucepan add water and bring to a boil. Add salt and 1 cup of couscous. Cook as directed on bag, usually 10-15 minutes.
Meanwhile while couscous is cooking, chop tomatoes and basil. In small bowl, whisk together olive oil, lemon juice, minced garlic, garlic powder, and salt and pepper to taste. In medium bowl, using half of the dressing add spinach and toss to coat.
When couscous is cooked, drain and add to separate bowl, Allow to cool for 10 minutes. Once cooled toss in and mix with tomatoes, fresh basil and dressing. Add on top of prepared spinach. Sprinkle with Parmesan cheese. Enjoy!
