Ingredients
- 1 cup couscous pearls
- 2 cups baby spinach
- 1 cup cherry tomatoes (cut in half)
- 1/4 cup fresh basil
- lemon juice from 1/2 lemon
- 2 TBSP Olive oil
- 1 garlic minced
- 1/2 tsp garlic powder
- 1/3 cup grated Parmesan cheese
- Salt
- Pepper
Instructions
- In medium saucepan add water and bring to a boil
- Add salt and 1 cup of couscous. Cook as directed on bag, usually 10-15 minutes
- Meanwhile while couscous is cooking, chop tomatoes and basil
- In small bowl, whisk together olive oil, lemon juice, minced garlic, garlic powder, and salt and pepper to taste
- In medium bowl, using half of the dressing add spinach and toss to coat
- When couscous is cooked, drain and add to separate bowl, Allow to cool for 10 minutes
- Once cooled toss in and mix with tomatoes, fresh basil and dressing
- Add on top of prepared spinach.
- Sprinkle with Parmesan cheese
