The people of France have gifted us many culinary delights. (Have you even had a croissant you didn’t like?) And the quiche is no exception to their many others offerings in that it tastes like a win every single time. However, it frequently feels like a daunting recipe to take on. I’m here to tell you that you can absolutely take on this dish! Especially if you follow a few key rules:
- Don’t forget to pre-bake the pie crust before adding your filling.
- The heavy cream is a must! Do not sub for regular milk as it helps create that nice, fluffy texture.
- Be sure to use 4 eggs for each cup of cream.
When it comes to fillings, there are so many options! I recommend things like diced ham, bacon, cheese of all types, spinach, and veggies of course! Asparagus, bell peppers, shallots, green onions and mushrooms are all great options. Don’t forget to pre-cook the veggies as well! I also love to use cilantro but you can also use parsley, and chives.
Homemade Quiche
Pie Crust:
- 2 cups flour
- 2/3 cup shortening or butter
- 1 tsp salt
- 2-3 TBSP cold water
Quiche filling:
- 4 eggs
- 1 cup cream or half and half
- 1/2 cup cooked meat (ham or bacon)
- 1 cup cheese (of your choice)
- 1/2 cup sliced mushrooms, precooked
- 1/4 cup green onions
- 1/2 cup spinach
- 1/4 cup chopped cilantro (or herb of your choice)
- Salt and pepper to taste (TIP! If you are using meat that is salty you will not need to add much. If you are going more vegetarian then you will want to add a bit more.)
To make the pie crust, add shortening, flour and salt to a mixing bowl. Cut with pastry cutter until crumbly. Gradually add in very cold water until the dough starts to stick together and you can easily form a ball.
Roll out your dough on a lightly floured surface and add to pie pan. Place in freezer for at least 30 minutes before baking. Bake at 350 for 20 minutes.
To prepare the filling, whisk together egg and dairy. Add your mix-ins and stir. Add to cooked by shell and bake at 350 for 45 minutes. I recommend using a pie shield to keep the crust from over-browning.
Remove from oven and let cool for 10 minutes. Slice and serve. For leftovers, simply reheat in the oven at 350 for 20 minutes. Enjoy!
