Around this time of year, there’s nothing quite like a home filled with the smell of a delicious holiday treat, which is why we love this recipe! It creates such a feels warm and festive feeling! Plus, when I tell you that the texture of these bars is so good, I mean it! You will not be disappointed! And I’m a firm believer that just about any dessert is made 10x better with a little buttercream frosting. In fact, I’m almost certain that buttercream frosting is the secret to world peace, I just haven’t figured out how yet… Give this recipe a try at your next holiday gathering!
Gingerbread Cookie Bars:
- 3/4 cup unsalted butter, softened
- 1 cup light brown sugar
- 1 egg
- 1/4 cup molasses
- 2 1/4 cup flour
- 2 tsp baking soda
- 1 tsp vanilla
- 1 tsp cinnamon
- 1 tsp ground ginger
- 1/2 tsp ground cloves
- 1/4 tsp ground nutmeg
Frosting:
- 1/2 cup butter, softened
- 8 oz cream cheese, softened
- 3 cup powder sugar
Preheat oven to 350F. Line 13×9 pan with parchment paper.
In a mixer, add butter and sugar. Beat together until fluffy. Add vanilla, egg and molasses and mix until combined.
Add the rest of the dry ingredients and mix until combined. Press cookie dough into prepared pan and bake until it slightly browns toward the edges, about 15-20 minutes. Allow to completely cool before frosting.
To make the frosting, beat butter and cream cheese, gradually adding powdered sugar. Beat for a couple minutes until light and fluffy. Spread over cooled bars and add sprinkles if desired. Cut into bars and enjoy!
