Gingerbread Cookie Bars

Description

These Gingerbread Cookie Bars make a tasty treat you can enjoy year round!


Ingredients

Scale
  • 3/4 cup unsalted butter, softened
  • 1 cup light brown sugar
  • 1 egg
  • 1/4 cup molasses
  • 2 1/4 cup flour
  • 2 tsp baking soda
  • 1 tsp vanilla
  • 1 tsp cinnamon
  • 1 tsp ground ginger
  • 1/2 tsp ground cloves
  • 1/4 tsp ground nutmeg

Frosting:

  • 1/2 cup butter, softened
  • 8 oz cream cheese, softened
  • 3 cup powder sugar


Instructions

  1. Preheat oven to 350F. Line 13×9 pan with parchment paper
  2. In a mixer, add butter and sugar. Beat together until fluffy
  3. Add vanilla, egg and molasses and mix until combined
  4. Add the rest of the dry ingredients and mix until combined
  5. Press cookie dough into prepared pan and bake until it slightly browns toward the edges, about 15-20 minutes
  6. Allow to completely cool before frosting

To make the frosting,

  1. Beat butter and cream cheese, gradually adding powdered sugar
  2. Beat for a couple minutes until light and fluffy
  3. Spread over cooled bars and add sprinkles if desired
  4. Cut into bars
