When I say “easy”, I mean EASY! This recipe is as simple as mix, marinade, and grill! And then you’ve got a light and delicious protein-packed meal that’s perfect for weekday dinners and even hosting big events! We love bringing these out for family gatherings – it’s always a solid crowd pleaser!
Easy Herb-Lemon Chicken Skewers:
- 4 large chicken breasts
- skewers
- 1/4 cup olive oil
- 1/4 cup fresh lemon juice
- 2-3 cloves of garlic, crushed
- 2 tsp fresh thyme
- 2 TBSP fresh rosemary
- 1 TBSP fresh oregano
- 1 tsp salt
- 1/2 tsp pepper
Combine all the ingredients for the marinade.
Slice the chicken into bite sized chunks and place in a bowl. Pour the marinade over the top, cover, and allow to marinade for 30 minutes – or up to 24 hour in the refrigerator. Thread the marinated chicken into soaked wooden skewers or metal skewers.
Heat on an outdoor grill or stove-top grill pan and cook the skewers, turning every 3-5 minutes until the chicken is cooked through and golden brown on all sides. Remove from the heat and let rest for 5 minutes before serving. Enjoy!
