Chicken Queso Dip:
- 1 large chicken breast, cooked and shredded (rotisserie works great)
- 1/2 tsp salt
- 1/2 tsp black pepper
- 4 cloves garlic, minced
- 1 tsp paprika
- 1 tsp oregano
- 8 oz cubed velveeta cheesse
- 6 oz pepper jack cheese
- 8 oz cream cheese
- 1 large jalapeño, seeded and chopped
- 1/4 cup cilantro, chopped
- 1/2 cup red onion, diced
- 14 oz can of diced tomatoes with chilies
- 6 oz evaporated milk
- tortilla chips
Toss the chicken with salt, pepper, garlic, paprika, and oregano.
In a 13×9 or 9×9 pan, add Velveeta cheese, pepper jack cheese, cream cheese, chicken, jalapeño, cilantro, red onion, and diced tomatoes. Drizzle with evaporated milk and bake, uncovered for 25-30 minutes, or until the cheese is melted. Stir to combine.
Serve warm with tortilla chips for dipping.
