There’s nothing quite as classic as the chocolate chip cookie! But do you ever feel like it could use a little more…chocolate? If you can relate, this recipe is for you! Soft, chewy, and chocolatey is the name of the game with these Chewy Double Chocolate Chip Cookies! If “death by chocolate” is a real thing, these cookies are the way I want to go out. Give this recipe a try and see for yourself!
Chewy Double Chocolate Chip Cookies:
- 1 cup butter
- 2 eggs
- 2 cup flour
- 2 tsp baking soda
- 1 1/2 cup brown sugar
- 1/2 cup sugar
- 2/3 cup cocoa powder, unsweetened
- 1/4 tsp salt
- 2 tsp vanilla
- 2 cup semi sweet chocolate chips (reserve 1/3 for top of cookies)
Preheat oven to 350. Line baking sheet with silicone mat or parchment paper. Cream butter with both sugars until light and fluffy. Add vanilla and egg to mixture and combine.
In a medium bowl, add your dry ingredients: flour, baking soda, salt, and cocoa powder. Mix together until incorporated. Gradually add dry ingredients to butter mixture and stir until everything is combined. Mix in 1 2/3 cup of chocolate chips. Save the final 1/3 cup for topping the baked cookies.
With a cookie scoop, scoop out dough and place on baking sheet. Bake for 8 minutes. When the cookies come out of the oven, add the remaining chocolate chips to the top of your cookies by gently pressing 3-5 chocolate chips onto the surface while they are still soft. Allow cookies to cool for 2 minutes before transferring to cooling rack to finish cooling completely.
Tip:
I love freezing cookie dough! To freeze, use a cookie scoop and lay out scooped cookie dough on a lined baking sheet. Place in freezer for 2-4 hours, then remove the dough from baking sheet and add to a freezer bag. You can store in freezer for up to 3 months. When you’re ready to bake just remove from freeze add to baking sheet, bake and enjoy! Keep in mind, you will need to increase baking time by about a minute.
