My husband loves a big breakfast of eggs, bacon and pancakes. But not me, give me a pastry and I am happy to call it breakfast. These White Chocolate Raspberry Scones are one of my favorites. I love the combination of chocolate and raspberries, add them to a scone and I am in heaven. These would be great to make for breakfast for the holidays.
White Chocolate Raspberry Scones

- 4 cups flour
- 2/3 cup sugar
- 2 TBSP baking powder
- 1 tsp salt
- 1 cup cold butter
- 1 cup white chocolate chips
- 3/4 cup milk
- 1/2 cup cream
- 2 eggs
- 1 1/2 tsp almond extract
- 1 tsp vanilla
- 2 cups raspberries
- 1/3 cup white chocolate chips for drizzle
In large bowl, stir together flour, sugar, baking powder and salt. Cut butter into dry mixture and work it in with a pastry cutter until the butter is incorporated into the dry ingredients. Stir in 1 cup of white chocolate chips.
In separate bowl, whisk together milk, cream, eggs, and extracts. Next, you will gradually add this mixture to the dry ingredients, stirring until just mixed in. You do not want to over mix. Gently fold in raspberries.
Divide dough in half. On floured surface pat dough into an 8 inch circle and cut into eight pie shaped wedges. Bake at 400 degrees for 15-20 minutes. If desired, drizzle white chocolate onto each scone (you should desire this, it makes them that much yummier). Enjoy!
