There is nothing like a warm bowl of soup on a cold day. Potato soups have always been a favorite of mine. Add a warm loaf of french bread and a salad and you have yourself a meal. This one is super easy, because it cooks in your slow cooker all day.
Ingredients:
- 8 medium Potatoes – cubed
- 1 Onion – finely chopped
- 1 quart Chicken Broth
- 1 lb Bacon
- 1 cup Shredded Cheese
- 1 cup Half and Half
- 1/4 cup Butter
- 1 tbsp Garlic Powder
- 1 tsp Pepper
- 2 tsp Salt
Cut up bacon into 1″ pieces and fry in pan.
Save a little of the bacon to use as a garnish.
While bacon is cooking, cut up potatoes into 1″ pieces and chop onions.
Add all ingredients into your slow cooker and stir before cooking.
Cook on low for 8 hours.
If desired, you can top it off with some shredded cheese, bacon crumbles, green onions and sour cream.

Ok recipe…I’ll probably make it again but do some significant changes. Even this time I added a can of corn which I would double next time. Less potatoes for sure and more bacon. Seemed a bit salty too so I would probably use reduced sodium broth next time.
