Here is a super simple recipe for Slow Cooker Creamy Tomato Soup that would be great to make on a cool winter night. We usually serve grilled cheese sandwiches with tomato soup. Sometimes I like to cook up some Tortellini and add it to the soup as well, it makes it a little heartier.
- 1 can Crushed Tomatoes (28 ounce)
- 4 cup Chicken Broth
- 1 tsp Oregano
- 1 tsp Basil
- 1 cup Heavy Cream
- 1 tsp Salt
- 1 tsp Pepper
- 2 TBSP Butter
Simply add tomatoes, chicken broth, oregano and basil to crock pot. Stir well.
Cook on high for 4-6 hours or low for 8 hours.
Strain soup and puree chunks in blender (or blend well with immersion blender) and return puree to slow cooker.
Add cream and butter and stir well, once they are combined well it is ready to serve.
