Just in time for St Patrick day! This is a different spin on the famous rueben sandwich. I use spinach tortillas, because who doesn’t love to add a bit of green to their food on St Patrick’s day.
Reuben Wrap (makes 4):
- 1 package spinach tortillas (10 inch)
- 1 lb sliced corned beef
- 1 lb sliced Swiss cheese
- 1 can sauerkraut
- 1/2 cup mayo
- 3 TBSP chili sauce
First mix the sauce by adding mayo and chili sauce to small bowl, mixed until combined. Lay out 4 tortillas and cover the tortilla with sauce up to 1 inch from the edge. Add sliced corn beef and cheese to cover the surface of the tortilla, also 1 inch form the edge. Sprinkle sauerkraut over the surface and gently roll up.
Wrap in foil to hold together while baking, and bake at 375 for 20 minutes. Slice in half and enjoy! If you are having a St Patrick day party. You can slice the wrap into pinwheels for perfect bite size party apps.
