This recipe is super simple and it’s a great alternative to deep frying. It’s so much healthier and I am sure you will absolutely love it.
Pan-Fried Lemon Butter Cod
- 1 lb cod (skinless)
- 3 TBSP flour
- 1 tsp Kosher salt
- 1/2 tsp pepper
- 1 egg
- 1 lemon
- 2 TBSP butter
- 2 TBSP olive oil
In container add flour, salt and pepper and mix. In a separate bowl add egg and beat. In frying pan, add olive oil and heat at medium heat.
Take each piece of cod and pat lightly with flour mixture. Then dip in egg and remove any excess egg. Add to frying pan cook for 3 minute or until browned gently flip. Add lemon juice from 1/2 lemon, a couple sliced lemons, and butter. Continue to cook for another 3 minutes.
Add a bit of salt to taste. Enjoy!
