Description
Pan-Fried Lemon Butter Cod is a great alternative to deep frying.
Ingredients
- 1 lb cod (skinless)
- 3 TBSP flour
- 1 tsp Kosher salt
- 1/2 tsp pepper
- 1 egg
- 1 lemon
- 2 TBSP butter
- 2 TBSP olive oil
Instructions
- In container add flour, salt and pepper and mix. In a separate bowl add egg and beat. In frying pan, add olive oil and heat at medium heat.
- Take each piece of cod and pat lightly with flour mixture. Then dip in egg and remove any excess egg. Add to frying pan cook for 3 minute or until browned gently flip. Add lemon juice from 1/2 lemon, a couple sliced lemons, and butter. Continue to cook for another 3 minutes.
- Add a bit of salt to taste.
