Our favorite go-to-meal for our family will always be tacos! I love this recipe and how it makes Taco Tuesday at little different and a little more delicious! We also like to have some fresh Pico de Gallo on hand with these tacos and for eating chips.
Mexican Street Tacos
Recipe found at Damn Delicious
- 2 TBSP soy sauce (reduced sodium if you have it)
- 2 TBSP fresh lime juice
- 2 TBSP vegetable oil, divided
- 3 garlic cloves, minced
- 2 tsp chili powder
- 1 tsp cumin
- 1 tsp dried oregano
- 1 1/2 lb flank steak, or skirt steak cut into 1/2 inch pieces
- 12 mini flour tortillas
- 3/4 cup diced red onion (we do less because we aren’t huge fans of onions)
- 1/2 cup chopped fresh cilantro
- Fresh lime wedges for garnish
In large ziplock bag, combine soy sauce, lime juice, 1 TBSP oil, garlic, chili powder, cumin and oregano. Add chopped steak and marinate for at least 1 hour, or up to 4 hours.
Heat 1 TBSP oil in large skillet over medium heat. Add steak with the marinade and cook, stirring often until steak has browned and marinade has reduced. (usually 5-6 minutes)
Warm up tortillas in oven, add steak and top with onions, cilantro and a lime juice. Enjoy!
