Description

These Mexican Street Tacos would be perfect for Taco Tuesday!

Ingredients

Scale
  • 2 TBSP soy sauce (reduced sodium if you have it)
  • 2 TBSP fresh lime juice
  • 2 TBSP vegetable oil, divided
  • 3 garlic cloves, minced
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1 tsp dried oregano
  • 1 1/2 lb flank steak, or skirt steak cut into 1/2 inch pieces
  • 12 mini flour tortillas
  • 3/4 cup diced red onion (we do less because we aren’t huge fans of onions)
  • 1/2 cup chopped fresh cilantro
  • Fresh lime wedges for garnish

Instructions

  1. In large ziploc bag, combine soy sauce, lime juice, 1 TBSP oil, garlic, chili powder, cumin and oregano
  2. Add chopped steak and marinate for at least 1 hour, or up to 4 hours
  3. Heat 1 TBSP oil in large skillet over medium heat
  4. Add steak with the marinade and cook, stirring often until steak has browned and marinade has reduced (usually 5-6 minutes)
  5. Warm up tortillas in oven, add steak and top with onions, cilantro and a lime juice
