Recipe from Sally’s Baking Addiction.
Lemon Sweet Rolls:
Rolls:
- 2 3/4 cup flour
- 3 TBSP sugar
- 1 tsp salt
- 1 package (2 1/4 tsp) instant yeast
- 1/2 cup water
- 1/4 cup whole milk
- 2 1/2 TBSP butter
- 1 egg
Filling:
- 1/4 cup butter, softened
- 3/4 cup sugar
- 1/2 tsp vanilla extract
- zest from 2 medium lemons
Cream Cheese Frosting:
-
- 4 oz cream cheese
- 1 cup powdered sugar
- juice from 2 lemons
- zest for garnish, optional
To start on the rolls, set aside 1/2 cup flour. In a large bowl, toss in 2 1/4 cup flour and the sugar, salt and yeast. Set aside.
In a microwave safe bowl, heat the water, milk and butter until the butter is completely melted and hot to the touch.
In a mixer, combine the butter mixture into the flour mixture. Add egg and just enough of the reserved flour to make the dough soft. (It will be ready when it begins to gently pull away from the sides of the bowl.)
On a floured surface, knead the dough for 3-4 minutes, then let rest for 10 minutes.
To make the filling, combine sugar, lemon zest and vanilla in a medium bowl. Stir until combined.
After 10 minutes, roll the dough out into an 8×14 rectangle. Spread softened butter over dough and sprinkle the sugar mixture over the top of the butter. Roll up dough tightly and cut into about 11 even pieces. Lightly spray pie pan with non stick cooking spray and arrange the rolls in pan.
Cover with foil and allow to rise 60-90 minutes. After the rolls have doubled in size, heat the oven to 375 and bake for 25-30 minutes. Cover rolls with foil after about 15 minutes to avoid heavy browning.
While the rolls are cooking, start on your frosting! Add cream cheese to a mixer and whip. Add in powdered sugar and lemon juice. Frost rolls just before eating and top off with a touch of lemon zest if desired. Enjoy!
