I love this Italian Pasta Salad, it’s one of my go-to dishes when I need to bring something to a potluck. I love the meats and cheese in the salad and I also love that I can pick so many of the ingredients right out of my garden. Plus, I love that pasta is so inexpensive.
Pasta Salad:
- 16 oz of rotini pasta
- 2 cups grape tomatoes
- 1 red bell pepper
- 3/4 cup red onion
- 1/2 cup black olives
- 8 oz of diced cooked ham
- 4 oz of diced salami
- 4 oz provolone cheese
Dressing:
- 2/3 cup olive oil
- 1 cup red wine vinegar
- 1 tsp salt
- 1 tsp pepper
- 1/2 tsp garlic powder
- 1 tsp sugar
- 2 teaspoons oregano (fresh or 1 tsp dried)
Makes 8 servings
Cook pasta as directed on box. After pasta is cooked add a splash of olive oil, just enough to coat pasta to prevent them sticking together. Next prepare vegetable, meats and cheeses by slicing and chopping. Next, add to cooled pasta and toss.
Prepare dressing by adding all ingredients into a mason jar or salad dressing bottle, add lid and shake until mixed well.
Immediately add to pasta and toss. Chill for at least an hour.
You may save leftovers into an air tight container for a couple days. Enjoy!
