If you’re hopping on that meal prep bandwagon, let me put you onto one of my favorite recipes! If you’re a fan of instant ramen, this is 100% going to be your thing! Plus, I feel like for some reason, we all have an obscene amount of empty mason jars just lying around our house, begging for a purpose so you most likely won’t even need to go out any buy a bunch of matching containers for this meal. This is perfect if you’re the kind of person who never has the energy to make a real meal when it’s lunch time. After you add in all of your ingredients, all it takes is 5 minutes and a bit of boiling water. This version is also a lot healthier (and tastier!) than packaged ramens because all of the ingredients are so much fresher! Give it a try this week and you won’t be disappointed! Homemade Instant Ramen:
- 1 tsp Better than Bouillon (chicken or beef)
- 2 tsp low sodium soy sauce
- 1/4 tsp ground ginger
- 1/4 tsp garlic powder
- 1/2 cup frozen mixed vegetables (carrots, peas and corn)
- 2 oz dried ramen noodles
- 1 green onion thinly sliced
- 1 TBSP cilantro
Add the Better the Bouillon, soy sauce, ginger, and garlic powder into a 16 oz mason jar. Place the lid on top and shake to combine.
Add in the frozen vegetables and place broken ramen noodles over the top. Finish off by adding the green onions and fresh cilantro. DO NOT MIX. Screw on the lid and place the jar in the fridge for up to four days.
To serve, pour 1 1/4 cup of boiling water over the noodles and cover for 5 minutes. Stir until seasoning is fully dissolved and enjoy!
