I love this recipe, it makes a super light and fluffy cheesecake with a hint of lemon. It’s wonderful plain or served with fresh fruit. My favorite is with strawberries. wonderful plain or with fresh fruit. It’s quick and easy to make, so you won’t be spending all day in the kitchen.
No-Bake Cheesecake Ingredients:
Crust
1 1/2 cup of graham cracker crumbs
1/2 cup butter
1/3 cup sugar
Cream Cheese filling
3 packs of 8oz cream cheese (room temperature)
2 cans sweetened condensed milk
2/3 cup of lemon juice
2 Teaspoons of vanilla
You will also need a 9.5 inch Spring Form Cake Pan with Detachable Bottom (Amazon link)
Melt butter in microwave, add butter to graham cracker and sugar and mix together.
Press mixture into 9.5″ springform pan. (8″-10″ will work just as well)
In mixer, whip cream cheese for 1 minute.
Add sweetened condensed milk, mix for another minute, make sure to scrape sides with spatula and continue to mix for 30 more seconds.
Stir in lemon juice and vanilla.
Add mixture to springform pan and smooth top with spatula. Refrigerate for 8 hours. Top with your choice of fresh fruit and Enjoy!
