Here is a great way to serve asparagus. These Crispy Asparagus Fries have a nice coating with breadcrumbs and parmesan cheese. Kids that aren’t big vegetable lovers even like these.
Ingredients:
- 1 bundle of Asparagus (nice thick ones are best)
- 1/2 cup flour
- 2 eggs (beaten)
- 1 cup of panko breadcrumbs (in the asian area of your grocery store)
- 1/3 grated parmesan (I had shredded and just used my mini blender to grate it)
- Salt and Pepper
Dip asparagus in the egg, then flour, next the panko breadcrumbs, and finally the parmesan cheese.
Place the asparagus on a wire rack on top of baking sheet. Salt and pepper the asparagus.
Bake at 425 degrees until golden brown, about 7-13 minutes. This is a yummy treat the whole family will enjoy, yes even the picky ones!
