With the kids back to school we are back to a busy schedule. Dinner needs to be more convenient this time of year and this is a great recipe that can be done in 30 minutes! This Chicken Caprese dish looks like it takes a ton of time, but it doesn’t!
Here are the ingredients you need to make Chicken Caprese:
- 4 boneless skinless chicken breasts (I used 2 large chicken breast cut in half)
- kosher salt and pepper
- 1 TPSP olive oil
- 3 garlic cloves minced
- 4 cups of cherry tomatoes cut in halves (or seasonal garden tomatoes)
- 10 large basil leaves chopped
- 8 oz fresh mozzarella sliced
- balsamic vinegar to taste
Salt and pepper chicken on both sides, In large saute’ pan, add 1 tablespoon of olive oil, add chicken and cook throughout. (until it reaches internal temp of 165F).
While chicken is cooking, in a medium saute’ pan, add 1 tablespoon olive oil and garlic and cook for 1 minute, add tomatoes and cook until they have softened up (about 5 minutes). Remove tomato sauce from heat and add fresh basil. Set aside.
Add 2 slices of fresh mozzarella to each of the cooked chicken breasts. Pour the tomato mixture onto the top of chicken. Cover with lid and allow cheese to melt about 1 minute. Drizzle with balsamic vinegar and serve. Enjoy!
