Mediterranean is one of my favorite kinds of food! It’s light, flavorful, and packed with healthy fats. This dish is no exception. And it’s surprisingly simple too! In just 30 minutes, you can have a fresh, delicious meal at your table!
Baked Salmon with Greek Salsa:
- 1 lb salmon
- 3 TBSP olive oil
- 2 small roma tomatoes, diced
- 1/2 cup cucumber, peeled and chopped
- 1/3 cup red onion, chopped
- 1/3 cup of olives, sliced
- 2 garlic cloves, minced
- 1 medium avocado, diced
- 1/2 cup feta cheese, crumbled
- 2 TBSP fresh lemon juice
- 3 TBSP fresh parsley, finely chopped
- 1 TBSP fresh oregano, finely chopped
- salt and pepper, to taste
Preheat the oven to 400 degrees. Add salmon to foil, drizzle with olive oil, a squeeze of fresh lemon, and season with salt and pepper. Seal the foil and cook for 20-25 minutes.
In a medium bowl, toss together the diced tomatoes, cucumber, red onions, olives, garlic, avocado, feta, lemon juice, 2 TBSP of olive oil, parsley, and oregano. Season with salt to taste.
When the salmon is done cooking, top with salsa and enjoy!
