Baked Salmon with Greek Salsa

This Baked Salmon with Greek Salsa is light, flavorful and simple to make!


Ingredients

Scale
  • 1 lb salmon
  • 3 TBSP olive oil
  • 2 small roma tomatoes, diced
  • 1/2 cup cucumber, peeled and chopped
  • 1/3 cup red onion, chopped
  • 1/3 cup of olives, sliced
  • 2 garlic cloves, minced
  • 1 medium avocado, diced
  • 1/2 cup feta cheese, crumbled
  • 2 TBSP fresh lemon juice
  • 3 TBSP fresh parsley, finely chopped
  • 1 TBSP fresh oregano, finely chopped
  • salt and pepper, to taste

Instructions

  1. Preheat the oven to 400 degrees
  2. Add salmon to foil, drizzle with olive oil, a squeeze of fresh lemon, and season with salt and pepper
  3. Seal the foil and cook for 20-25 minutes
  4. In a medium bowl, toss together the diced tomatoes, cucumber, red onions, olives, garlic, avocado, feta, lemon juice, 2 TBSP of olive oil, parsley, and oregano
  5. Season with salt to taste
  6. When the salmon is done cooking, top with salsa
