Description
This Baked Salmon with Greek Salsa is light, flavorful and simple to make!
Ingredients
- 1 lb salmon
- 3 TBSP olive oil
- 2 small roma tomatoes, diced
- 1/2 cup cucumber, peeled and chopped
- 1/3 cup red onion, chopped
- 1/3 cup of olives, sliced
- 2 garlic cloves, minced
- 1 medium avocado, diced
- 1/2 cup feta cheese, crumbled
- 2 TBSP fresh lemon juice
- 3 TBSP fresh parsley, finely chopped
- 1 TBSP fresh oregano, finely chopped
- salt and pepper, to taste
Instructions
- Preheat the oven to 400 degrees
- Add salmon to foil, drizzle with olive oil, a squeeze of fresh lemon, and season with salt and pepper
- Seal the foil and cook for 20-25 minutes
- In a medium bowl, toss together the diced tomatoes, cucumber, red onions, olives, garlic, avocado, feta, lemon juice, 2 TBSP of olive oil, parsley, and oregano
- Season with salt to taste
- When the salmon is done cooking, top with salsa
