It’s a great time to try some thing new for breakfast! These are danish treats called Aebleskivers and the best way to describe them is a cross between a donut hole and a pancake that is filled with jam or chocolate. To make these you will need a Aebleskiver pan, which is available at Amazon.
Aebleskivers:
- 2 tsp sugar
- 1 tsp baking powder
- 1/2 tsp salt
- 1 tsp baking soda
- 2 cups of buttermilk
- 2 TBSP melted butter
- 2 cups flour
- 3 eggs
- filling: jam or chocolate
- powdered sugar for garnish
Separate eggs, and whisk egg whites until stiff. In separate bowl, add egg yolks, sugar and whisk.
Add buttermilk and melted butter and continue to whisk, gradually add dry ingredients until it’s all combined. If you don’t have buttermilk, you can substitute by making your own. Put 2 TBSP of lemon juice and then fill the measuring cup with regular milk until it reaches the 2 cup mark. Gently fold in the egg whites. do not over stir this process is what makes them super light and fluffy.
Put the Aebleskeiver pan on your stove top over medium heat. Spray with non-stick cooking spray. Add a spoonful of batter, quickly add a dab of filling, either jam or chocolate. Both are yummy. Top off with another spoonful of batter.
The top will start to bubble and you should notice browning around the edge. It is time gently flip the pancake ball, I use a small table spoon. My kit came with flipping sticks, but I found a spoon worked better for me. Allow other side to brown and remove from pan. Dust with powder sugar and Enjoy!
