Turtle candies are some of my favorite, but I don’t have them all that often. That is why I love these Turtle Thumbprint Cookies so much, I get my favorite candy in cookie form. Give them a try, I bet you will love them too!
Turtle Thumbprint Cookies
Recipe inspired by Lil Luna
- 1/2 cup butter (room temperature)
- 2/3 cup sugar
- 1 egg
- 2 TBSP milk
- 1 tsp vanilla
- 1 cup flour
- 1/3 cup cocoa powder
- 1/4 tsp salt
- 1 cup walnuts
- 16 unwrapped caramel squares
- 1/2 cup Ghirardelli dark chocolate candy meltsIn mixer, add butter and sugar and beat until well combined and fluffy. Add egg yolk, milk and vanilla. Reserve the egg white in separate container and cover and refrigerate until ready to bake in medium bowl, whisk together the flour, cocoa powder and salt. Gradually add the flour mixture into the butter mixture and beat until combined. Cover and refrigerate for 1 hour or longer.Preheat oven to 350, and line baking sheet with silicone baking mat or parchment paper.
Beat egg whites, shape dough into 1 inch balls and roll into egg white, then roll into chopped walnuts. Place on baking sheet and lightly press down with your thumb. Bake 12-13 minutes and allow to cool slightly on baking sheet.
While cookies are baking, add caramel and cream into small sauce pan and heat on low until caramels are melted and smooth.
When cookies are warm press down on the center of cookie with you thumb again and add a 1/2 tsp of caramel to each cookie. Allow to completely cool.
Melt candy melts in microwave in 30 second intervals until smooth. Using and pastry bag, add melted chocolate and snip the tip off of the bag and drizzle chocolate over each cookie. Allow chocolate to set. Time to enjoy!!
