I love egg bites, they can be made ahead of time, and reheated for an on-the-go breakfast. The are heathy and oh so delicious. I like the fact that the options are endless with what you mix it, but this recipe is one of our household favorites.
Ham & Red Pepper Egg Bites
Makes 8 egg bites
- 4 eggs
- 1/4 cup milk
- 2 TBSP cubed ham (available in the deli meat isle)
- 1 TBSP red pepper (diced)
- 1 TBSP chopped cilantro
- 1 TBSP shredded parmesan cheese
- 1/4 tsp garlic salt
- salt and pepper to taste
- Garnish with cherry tomatoes (optional)
We make our Egg Bites using the Dash Egg Bite Maker, it comes with different molds to make one large 2-egg omelet which is the perfect size for a bagel breakfast sandwich. Or you can make mini egg bites. I seriously love all the cute Dash kitchen appliances. We also own the Dash Mini Waffle Maker, it is so much fun!
Start by prepping the eggs, add a 1/4 cup milk or cream and whisk. Add garlic, salt and pepper to your liking. Set aside. Preheat your Dash Egg Bite Maker.
Prep you ingredients, you should have pre-cubed ham, diced red bell peppers, chopped cilantro, and shredded parmesan cheese.
Open your dash egg bite make add 2 TBSP of water, and place the molds in water. Add your ingredients it each mold, I do 4-5 pieces of each ham and divide the pepper, cilantro and cheese evenly between the 4 molds.
Fill your molds with egg mixture, about 75% full. Close lid and let cook for 10-12 minutes. Gently remove from water bath and pop out of molds and garnish with halved cherry tomatoes. Enjoy!!
